Join us as we embark on a vibrant culinary journey through Oaxaca, where rich traditions and bold flavors ignite every sense. Beginning in lively Oaxaca City, we’ll explore bustling markets filled with chiles, cacao, heirloom corn, and mezcal, while discovering the city’s deep Indigenous roots and artistic spirit as we wander its historic center. Along the way, we’ll immerse ourselves in hands-on experiences—from learning the art of nixtamalization and tortilla-making to preparing complex moles in family kitchens—while connecting with local artisans, mezcal producers, and community hosts who generously share their craft and stories. From sipping mezcal in the valleys to uncovering family recipes and browsing markets filled with handmade textiles, each moment is designed to blend flavor, tradition, and culture into one unforgettable Oaxacan adventure.

Day One - February 6th, 2027

Arrivals and Private Transfers to Hotel
Private transfers from the airport to our 4* boutique accommodations. After an early evening orientation, we’ll have a group Welcome Dinner at a beautiful local restaurant, Criollo, diving straight into Oaxaca’s dynamic food culture. Meals: D

Day Two - February 7th, 2027

Cooking Class & Textile Dyes
We’ll begin with a market visit and cooking class with Teotitlán del Valle, where you’ll learn about local ingredients, family cooking traditions, and the techniques behind some of Oaxaca’s most iconic dishes. After lunch, we’ll enjoy an interactive natural dye experience, gaining insight into the artistry, plants, and ancestral methods used to create the rich colors seen in the community’s textiles. In the evening, you’ll have a free night to explore the city.

Day Three - February 8th, 2027

Walking Tours
We’ll begin our next day with a guided walking tour through Oaxaca City, exploring its historic streets, architectural highlights, and cultural landmarks. For lunch, we’ll head to Mercado 20 de Noviembre to eat like locals. At an informal stall, guests choose their preferred cut of meat, paired with rice, beans, nopal salad, and warm tortillas—a simple, flavorful meal rooted in everyday Oaxacan cooking. Free evening.

Day Four - February 9th, 2027

Monte Albán & Alebrije Experience
We’ll start the day with a visit to Monte Albán, one of the most important archaeological sites in Mesoamerica. Walking through its wide plazas and ancient temples offers a clear window into the history and knowledge of the Zapotec civilization. From there, we’ll travel to Zoológico Mágico for a meal with Maestra Rosario. Her cooking reflects the warmth and traditions of her community, and sharing this meal offers an intimate look at everyday flavors rooted in family recipes. After lunch, we’ll dive into an immersive alebrije experience, learning how artisans bring these colorful sculptures to life. After a restful siesta at our hotel, we’ll head back out for dinner. We’ll end the day at Levadura de Olla, where Chef Thalía Barrios García brings a thoughtful approach to Oaxacan cuisine, highlighting heirloom ingredients and traditional techniques in a fresh, elegant way.

Day Five - February 10th, 2027

Chocolate Making
We start the day with an in depth chocolate experience, where you’ll learn to make your own chocolate using traditional methods inspired by the practices of the local community, from understanding Oaxacan cacao to toasting, grinding, and preparing it by hand. We’ll work with our friends at Chimalpa Cacao with simple tools sourced from local markets, choose the sweetness of your chocolate, and finish by preparing a traditional cacao drink with a molinillo, enjoyed alongside a small cacao based snack. Each participant leaves with chocolate they’ve crafted themselves. The rest of the day is yours to explore Oaxaca at your own pace.

Day Six - February 11th, 2027

Mitla & Farewell Dinner
This morning is free to relax and unwind or shop. In the early afternoon, we’ll head out to the Mitla archaeological site, an important center of Zapotec culture known for its geometric stonework and distinct architectural style. Walking through its courtyards offers a closer understanding of the region’s history and the people who shaped it. In the evening, we’ll share a farewell dinner with Don Jerónimo at his palenque, learning about mezcal production from field to cup. Surrounded by agave and warm conversation, we’ll celebrate our time together, reflect on the journey, and enjoy a memorable final night in Oaxaca.

Day Seven - February 12, 2027

Departure
After one final breakfast, a private transfer takes you to the Oaxaca airport for your flight home.
